These stylish alcohol-free cocktails, made using rose, peppermint, vanilla
and orange blossom extracts make a refreshing change from O.J. or Diet
coke!
Rosy apples
Stir together 1/4tsp clear honey. 2 drops rose water and 1 tbsp freshly
squeezed lime juice in a cocktail shaker until the homey has dissolved.
Add 125ml well-chilled sparkling spring water with apple and elderflower,
and ice, and stir until cold. Carefully strain into a large Champagne
flute. Serves 1.
Lebanese lemonade
Shake 150ml traditional lemonade with 2 crushed cardamom pods, 2 drops
orange blossom water and ice in a cocktail shaker. Strain into a tall
glass filled with ice cubes. Garnish with a long curled strip of lemon
zest. Serves 1.
Turkish delight
Put a sieve over a large bowl. Roll a pomegranate back and forth along
a hard surface, applying pressure with the palm of your hand to loosen
the seeds inside. Once the pomegranate feels soft, slice in half over
the sieve and squeeze out the seeds and juice. Press the seeds to extract
maximum juice. You should have about 150ml. Shake in cocktail shaker with
½ tsp vanilla extract and ice. Strain into martini glass and garnish with
a vanilla pod. Serves 1.
Grapefruit mojito
Measure 150 ml fresh grapefruit juice. Stir 2 tbsp of the juice with
1/4tsp honey until the honey is dissolved. Transfer to a cocktail shaker
with the remaining juice, add 2 drops peppermint extract and shake with
ice. Strain into a glass filled with crushed ice and bruised mint leaves.
